Last week was spent doing some December planning and enjoying the Thanksgiving holiday. Before heading to New Mexico to see some family, I made a little vegan meal for myself and my love. Nothing too fancy, but it was yummy. I flew down to New Mexico and stayed at my dad’s new house. We had a HUGE Thanksgiving day lunch with a lot of family, green chile and delicious food. I ate far too much pie. 🙂 Thankfully, I was able to borrow my dad’s shoes (because I’m terrible and packed last minute) so that I could hit the gym with him and my step mom.

I played with the dog, met their new horse and finally got to meet my nephew! He’s adorable and I had a lot of fun ticking his belly and listening to his chatty coos. It was nice to be back in my home state, and I even grabbed some of the best burritos ever to bring back to my love since he couldn’t come!

This past Monday I celebrated one year with my awesome man. Time has flown and I’m so grateful that I met him before leaving Hawaii. Excited to see what this next year brings for us both individually and as a couple. Other than that I’m (kinda) enjoying this winter weather! We got a decent amount of snow, but freezing cold temperatures here in Denver. The roads are slick and it’s so unbelievable cold, but it’s surprisingly fun to be back in a state with snow.
